Bitter compounds are important components in ensuring the characteristic taste of food and beverages, but they also pose a challenge within medicine (particularly for children) if regular intake becomes a daily struggle or leads to complete refusal to consume medicine due to its bitterness. This test allows a substantially better estimate of the perceived bitterness of a product. In addition, it allows bitterness to be determined at an early stage in pharmaceutical development and regulated using suitable countermeasures – and all these capabilities without animal testing . . .
